Muddle the cucumber with the lemon juice and sugar syrup.
Add the other ingredients and shake.
Pour into an old-fashioned glass and add the bicarbonate of soda and citric acid mixture to aerate the cocktail.
Decorate with a disc of isomalt
Isomalt instructions: Heat the oven to 240°C. Place the isomalt in silicone moulds and bake for 10 min. When the isomalt has dissolved, remove from the oven and leave to cool for 1 min. Garnish with the decoration of your choice. Leave to cool fully, then remove from the moulds.
